Rosé cava for the aperitif

The aperitif is a meal that has been gaining prominence in our lives. From the irruption of brunch to vermouth fever; installed for a few years in the routine of the weekend or the holidays. The point is that this meal between breakfast and lunch (often closer to food, but that everyone feels free to set it where they want), has come to stay.

The aperitif goes beyond a bag of chips and a Bitter Kas (by the way, a classic and great combination): rosé cavas are an excellent ally to succeed in an aperitif. Its versatility, lightness, but, at the same time, its touch of personality; make them ideal for this type of meal before big meals. They will give us a touch of creativity that will open the doors to a world of possibilities.

Here we explain how a rosé cava is made and we present the two proposals of our house 🙂

How do you make a rosé cava?

For the production of rosé cava, red varieties are used, or a combination of red (main) grape with white grape varieties. Red wines are made by letting the must rest with the grape skins for a period of two to three weeks (this is called maceration). Well, the special touch of rosé cavas is the color, and it is achieved by macerating it but for less time. The rest of the process is the same as for the rest of cavas, with the different nuances that the elaboration of a cava can have. However, it has its touch of complexity and the quality of the grape must be just right.

The rosé cava that is part of the D.O. Cava is made with the pinot noir, trepat, garnatxa and monastrell varieties; in addition to the white varieties of this denomination.

We tell you the main characteristics of our Brut Vinatge Rose so that you can appreciate and enjoy it to the fullest during the aperitifs of this approaching spring …

Varieties:

70% pinot noir and 30% parellada. During the harvest, the grape harvest of these two varieties is done separately. It is a 100% organic cava.

Elaboration:

Afterwards, we do a gentle pressing with a small maceration, so as not to increase the color and achieve its pale pink hue. Fermentation takes place in stainless steel tanks, at a very low temperature. Once the base wine has finished fermentation, it is stabilized and filtered to proceed to the draft and the second fermentation in the bottle.

Aging:

It has a minimum of 12 months of aging.

Tasting note:

It has a high aromatic intensity, with aromas of tropical fruits, especially red fruits, and with a touch of citrus. However, its flavor is light and pleasant and the bubbles are very well integrated, which contributes to its long flavor, but not prominent.

All these characteristics make it an ideal cava for aperitifs, for example, it combines very well with soft cheeses. However, its versatility makes it a good cava for all kinds of meals.

Naveran Perles Roses

What can we tell you about Perles Roses? For us it is a very special and unique cava and, like all Naveran cavas, it is 100% organic.

Varieties:

100% Pinot Noir, a variety that is quite a challenge: it is sensitive to changes in temperature and the grapes are small and compact, which makes them also delicate. However, the effort is worth it, since it gives wines and cavas a touch of elegance.

Elaboration:

Pinot Noir grapes are picked in early August with boxes to minimize maceration. Once in the cellar, they are gently pressed and fermented in stainless steel at a low temperature. After the tirage, the second fermentation takes place in the bottle, typical of the “Champenoise Method”, that is, in the bottle with the addition of yeasts and sugars.

Aging:

After a rearing period of at least 24 months; it is ready for disgorgement.

Tasting note:

Its name comes from the small pale pink bubbles that slowly rise through the glass, forming the characteristic crown. At first, it will seem like a light cava, with a fine aroma. However, we will immediately notice that the varietal and aging character persists. In the mouth it is pleasant, full and unctuous, with an elegant and very long aftertaste. Thanks to this, we can accompany this cava with appetizers of all kinds; but as it has body, it will serve us to accompany more complex appetizers.
